10/20-Ground Brisket Meatloaf

Ground Brisket Meatloaf 

Meatloaf:

3 lbs. Cremer’s Ground Brisket

1 ½ cups Quaker Oats, Old Fashioned

1 ½ cups finely chopped onion

1 cup ketchup

2 eggs, lightly beaten

2 tbsp. Worcestershire sauce

4 cloves garlic, minced

1 tsp. salt

½ tsp. pepper

1 tbsp. Sriracha sauce (optional) 

Sauce:

2 cups ketchup

½ cup brown sugar

3 tbsp. white vinegar 

Heat oven to 350-degrees F.  Combine meatloaf ingredients in a large bowl; mix lightly but thoroughly.  Shape into a loaf and add to a greased 9 x 13-inch baking dish.  Bake 1 ½-2 hours until meatloaf is baked to medium (160-degrees). 

Twenty minutes before the meatloaf is done, remove from oven and carefully drain off excess fat.  Mix the sauce ingredients in a medium pan over medium heat and warm.  Do not boil!  Brush the top of the meatloaf with sauce.  Return to oven and continue cooking.  Remove from oven and let rest 5 minutes before serving.
