4/12-BBQ Beef Sandwiches

BBQ Beef Sandwiches  (makes 12 sandwiches) 

Roast Rub:

3-4 lb. Chuck Roast

1 tbsp. brown sugar

¾ tsp. freshly ground black pepper

 BBQ Sauce:

1 cup ketchup

1 cup chopped onion

2 cloves garlic, minced

1 6oz. can tomato paste

¼ cup packed brown sugar

2 tbsp. Worcestershire sauce

2 tbsp. molasses

1 tbsp. Chili powder

2 tsp. regular or Dijon mustard

1 tsp. dry mustard

1 tsp. salt

 

Hamburger buns

Red onion slices

Hamburger pickles

Coleslaw 

Combine the rub ingredients and rub it over all sides of the chuck roast. 

Add all the sauce ingredients to a large slow cooker and mix well.  Add in the chuck roast and turn to coat the roast.  Cover the slow cooker, and cook on high for 1 hour.  Reduce heat to low and cook an additional 6-7 hours.  Remove the roast from the slow cooker, and place it on a cutting board.  Shred the roast with two forks, and then returned shredded beef back to the slow cooker.  Stir to coat.  

Add shredded beef to a bun and top with red onion rings, pickle slices or coleslaw.  Serve.
