4/26-South Carolina Bird Dog Sandwiches

South Carolina Bird Dog Sandwiches (makes 8) 

3 lbs. breaded chicken tenders or fingers, cooked, and chopped

12 slices bacon, cooked and crumbled

2 cups shredded cheddar cheese

1 cup honey mustard dressing

Hot dog buns (sturdy buns)

Soften butter 

Preheat oven broiler to high.  Open buns, being careful not to have them apart.  Carefully butter cut side of bun and place on a baking sheet.  Pop them under the broiler for about 1 minute, until golden brown.  Remove from oven. 

Place the crumbled bacon on bottom half of each bun.  Top with some of the chicken tender pieces.  Sprinkle some of the shredded cheddar cheese over the chicken.  Pop the sandwich back under the broiler for 2-3 minutes, or until cheese melts.  Remove from oven and drizzle with some of the honey mustard dressing.  Serve.
