Roasted Pork Sandwiches
2-3 lbs. Pork loin
1-2 tbsp. Vegetable Oil
Fresh ground Pepper
Kosher Salt
Your favorite dry rub for pork
2 medium onions, sliced
12 slices Provolone Cheese
2 loaves Crusty French Bread
Stone Ground Honey Mustard
1/4 cup Mayonnaise
2 tbsp. stone ground mustard
1 tbsp. honey
Fresh ground black pepper
Preheat oven to 350-degrees F. Rub the pork loin with vegetable oil and sprinkle with salt and pepper, and your favorite dry rub for pork. In a large skillet, over medium-high heat, once hot, add pork loin and sear on all sides. Add sliced onions around the roast and place skillet in hot oven and roast until a meat thermometer reads 145-degrees f, about 1 hour. Rotate roast and stir onions after 30 minutes. If your onions appear to be burning, simply remove them from the skillet to a separate bowl.
Once pork loin has cooked, remove from oven and let rest 10 minutes.
While pork is resting, slice open the loaves of French bread and, and place under the broiler on low and slightly toast the interior of the bun until it begins to brown. Thinly slice pork roast and place on the French bread, then top with provolone cheese. With the sandwich lying open, place briefly under the broiler to melt the cheese. Remove from the broiler and top with onions. Spread some of the honey mustard on top inside part of bread. Close and serve.
