Baked Cajun Catfish
2-3 lbs. raw catfish fillets (about 8 fillets)
2 tsp. lemon juice
2 tsp. hot sauce
Salt, Pepper and cayenne pepper, to taste
1 tsp. paprika
2 tsp. dried parsley flakes
1 tsp. Oregano
1 tsp. Thyme
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. lemon zest, optional
Olive oil
Preheat oven to 400-degrees F. Line a large baking sheet with aluminum foil and generously spray with cooking spray. Drizzle some olive oil over aluminum foil and spread around. Place the catfish fillets skin side down on the baking sheet. In a small bowl, mix together the lemon juice and some of the hot sauce. Brush the mixture over the fillets. Sprinkle the fillets with salt, pepper, and cayenne pepper. In a small bowl, mix together paprika, parsley flakes, oregano, thyme, garlic powder and onion powder. Sprinkle the dried seasonings over each fillet. Sprinkle the lemon zest over fillets. Place the baking sheet in the oven, and bake 10-15 minutes, or until fish flakes easily with a fork and a digital meat thermometer reads 145-degrees F.
