I took advantage of that great deal to make “Cajun Honey Pork Tenderloins”. This was a winner of a dinner! So tender and moist. And, easy to prepare! Has a wonderful balance of spices in the homemade Cajun seasoning I whipped up.
Cajun Honey Pork Tenderloin
Cajun Seasoning:
2 tbsp. smoked paprika
1 tbsp. salt
2 tbsp. garlic powder
1 tbsp. black pepper
1 tbsp. onion powder
2 tsp. cayenne pepper
1 tbsp. dried oregano
1 tbsp. dried thyme
1 tsp. crushed red pepper flakes
Mix all ingredients in a sealable container.
Tenderloins:
2 (1lb.) pork tenderloins
2 tbsp. Cajun seasoning
2 tbsp. Olive oil
¼ cup unsalted butter
¼ cup honey
½ cup chicken stock or broth
Preheat oven to 375-degrees F. Sprinkle the Cajun seasoning all over the pork tenderloins and rub in well.
Heat the olive oil in a large skillet over medium-high heat. Add the tenderloins and sear on all sides until golden brown. Transfer to a plate and set aside.
To the skillet, add the butter, honey and chicken stock and cook until the mixture comes to a boil. Add the tenderloins back to the skillet and transfer the skillet to the preheated oven. Cook for 15-18 minutes or until a meat thermometer reaches 155-degrees F. Remove the skillet from the oven and transfer the pork to a plate. Place the skillet back on the stove over medium-high heat and simmer the sauce until it reduces and thickens, about 2-3 minutes. Taste the sauce and adjust with salt or Cajun spice. Place the pork tenderloins back in the skillet and flip it around in the sauce to coat evenly. Cut into slices and serve with sauce.
