7/14-Chopped Cheese Sandwiches

Chopped Cheese Sandwiches   (makes 9) 

3 lbs. Ground Beef

1 large white onion, chopped

5 cloves garlic, chopped

1 ½ tsp. kosher salt

½ tsp. black pepper

1 ¼ tbsp. Worcestershire sauce

9 Hoagie rolls

18 slices American cheese

9 tbsp. mayonnaise

Shredded iceberg lettuce, for serving

Tomato slices, for serving

Butter from browning rolls, softened 

Add the ground beef to a griddle or large skillet over medium-low heat.  Slowly cook the meat, stirring and chopping into crumbles as the meat cooks.  Once the beef is browned, about 7-8 minutes, increase heat to medium and add onions and garlic.  Stir and cook another 4-5 minutes until onions are translucent.  Season with salt, pepper and Worcestershire sauce.  Remove from heat. 

Slice the hoagie rolls in half and butter both sides, then toast over medium-low heat in batches on the griddle or skillet. 

Warm the beef filling on the griddle or skillet over medium-low heat.  Once warm, separate into 1/3’s (making 9 servings) and cover with 2 slices of American cheese.  Cook long enough to ensure cheese melts into beef filling.  You may roughly “chop” the cheese into the beef filling with the side of a spatula. 

Add a tablespoon of mayonnaise to one side of your toasted roll and cover with the beef filling, by placing the roll, toasted side down, on top of beef mixture.  After 30 seconds, use a spatula to flip the roll, keeping the filling inside.  If any falls out, add it back into bun.  Repeat as needed to make other sandwiches.  Add shredded lettuce and sliced tomato to the sandwich.  Cut in half and serve.
