4/4-Grilled Lemon Parmesan Salmon and Asparagus Foil Pack

Grilled Lemon Parmesan Salmon & Asparagus Foil Packs 

6 Salmon fillets

1 1/2 lbs. asparagus spears, wood ends trimmed

1/2 cup butter, melted

½ cup lemon juice

2 tbsp. minced garlic

2 tsp. dried parsley

½ tsp. salt

½ tsp. pepper

1 cup freshly grated Parmesan cheese

Lemon wedges

Aluminum foil (6 12”x 18” pieces) 

Place each salmon fillet in the center of a 12” x 18” heavy-duty aluminum foil piece.  Divide the asparagus into 6 equal portions and arrange next to the salmon on each foil piece.  

In a small bowl, mix together the melted butter, lemon juice, garlic and parsley.  Pour the mixture evenly over each piece of salmon and asparagus; season with salt and pepper and top each with 2-3 tablespoons parmesan cheese. 

Preheat grill to medium-high heat.   

Tent the foil and tightly seal the edges to prevent the butter from leaking. 

Grill each pack, covered, and grill for 15-20 minutes.  Serve with fresh lemon wedges.  Salmon should be at least 135-degrees F for medium doneness.  Remove from grill and let rest 5 minutes.  Carefully remove the salmon and asparagus and serve.
