Oven Baked Shrimp Skewers with Cilantro/Lime Marinade

4 cups loosely packed cilantro stems and leaves, rinsed and patted dry

6 cloves garlic

¼ cup olive oil

2 limes, juiced and zested

1 tbsp. honey

1 tsp. cumin

1 tsp. kosher salt

2 tbsp. butter, melted

2 lbs. raw shrimp, peeled and deveined, rinsed and patted dry

Or 1 bottle cilantro/lime marinade available at Cremer’s, remove 2 tbsp. and add to a small bowl, set aside 

In a large blender or food processor, add cilantro, garlic, olive oil, lime juice, lime zest, honey, cumin, and salt.  Blend until smooth. 

Remove about 2 tablespoons of the cilantro marinade and whisk it into the small bowl of melted butter.  Set aside. 

In a large bowl, combine the marinade and shrimp.  Toss until well coated.  Cover and refrigerate 30-60 minutes.  

Preheat oven to 450-degrees F,  Line a baking sheet with parchment paper.  Add shrimp to skewers, piercing from the head to the tail.  Repeat, threading 3-4 shrimp per skewer.

Add to baking sheet.  Bake 7-8 minutes and broil if you desire.  Brush hot shrimp with butter sauce.  Enjoy!
