“Beef Shank Chili” was a huge hit! I have never used Beef Shank in chili, up until now, and, I will definitely be making it again!! Cremers has Beef Shank on sale this week at $3.99lb. I picked up 5lbs for this week’s recipe. It was so flavorful, a rich bold flavor. Next time, I might kick up the heat just a bit. Not that there wasn’t some heat in the chili, perhaps just a tab more will make it pop.


Spray a large slow cooker with cooking spray. Heat oil in a large skillet over medium heat. Season the beef shanks cuts with salt and pepper, then add to the oil and brown on all sides. Using a slotted spoon, transfer the beef shank pieces to the slow cooker. Reduce heat to low. Use ½ cup of beef stock or broth, or water to deglaze the pan and scrape up any browned bits. Pour the liquid from the skillet into the slow cooker. Add remaining ingredients (except garnish items) to the slow cooker and stir. Cook on low 7-8 hours. Serve with sour cream, shredded cheddar cheese and some Fritos.
