12/15-Mike’s Ham & Cheese Strata

Mike’s Ham & Cheese Strata 

16 slices white bread, crusts removed and cubed

3 cups diced ham

1 ½ cups shredded cheddar cheese

1 ½ cup shredded Swiss cheese (or Colby/Jack or Monterrey/Jack)

9 large eggs

2 cups milk (any kind)

1 tsp. salt

1 tsp. dry mustard

½ tsp. garlic powder

½ tsp. onion powder

¼ tsp. black pepper

2 cups Corn Flakes

½ cup melted butter 

Spray a 9 x 13-inch baking dish with cooking spray.  Layer the bread cubes at the bottom of the baking dish, then with cubed ham, then the cheeses.  

In a medium-size bowl, whisk together the eggs, milk, salt, mustard, garlic powder, onion powder and black pepper.  Slowly pour the mixture over the baking dish evenly.  Cover with foil and refrigerate overnight, or at least 6 hours. 

Remove the strata from the fridge about 30 minutes before baking.  Heat oven to 375-degrees F.  Bake for 30 minutes, covered.  Remove from the oven, remove foil, sprinkle evenly with corn flake mixture and return to oven and bake, uncovered, another 15-20 minutes, or until the top is golden brown and puffy. 

Remove from oven, let rest 5-10 minutes.  Cut and serve.
