2/16-Dijon Baked Cod

Dijon Baked Cod 

8 (5 oz.) pieces Cod

Sea Salt

Pepper

Olive Oil Cooking spray

3 tsp. paprika

4 tbsp. mayonnaise

4 tbsp. Dijon mustard

1 ½ cup Panko breadcrumbs

1 cup grated Parmesan cheese

1 tsp. dried thyme

1 tsp. garlic powder

Fresh lemon wedges for serving 

Preheat oven to 400-degrees F.  

Rinse and pat fish dry with paper towels.  Season with sea salt and pepper. 

Whisk together the mayonnaise, mustard, and paprika until smooth.  Spoon the mixture over the tops and sides of fish portions (don’t coat the bottoms!).  In a pie pan, combine the Panko breadcrumbs, Parmesan cheese, thyme and garlic powder. Stir until well combined.  Roll the cod in the mixture evenly over the top and sides of the fish.  

To a large baking sheet, coated with cooking spray add cod and spray tops with Olive oil cooking spray.  Place in oven and bake for 10-12 minutes, or until internal temperature reads 145-degrees F.  Then, move the baking pan to the top oven rack, (about 5 inches below heat source), and broil for 45 seconds to 1 minute.  Keep a close watch on it, you don’t want it to burn.  Get the top golden, not burned! 

Remove from the oven and carefully take the fish out of the pan.  Serve with fresh lemon wedges.
